A great weekend of dance!

Wow, what a great weekend! I met so many great dancers and artists from around the country this weekend at OSU. Everyone was so chatty and full of excitement about their projects they were working on. Everyone had their own way of making their passion (dance) a part of their lives. It was also wonderful to be a part of Ministry in Motion's Showcase at BalletMET Columbus. If you didn't know, BalletMET is the fifth largest ballet company in the nation and it is the largest in the Midwestern region! We (Christian Dance groups from the Columbus area) used their performance space to raise nearly $300 to support the Red Cross and their efforts in Haiti. I met some wonderful people at the performance with whom I look forward to collaborating in the near future! Save the date: March 20th 7pm $15 ticketsKings Arts Theatre Complex. I'll keep you posted...

The benefit performance for this weekend at Abbey Theater to raise funds for the Cancer unit at an area Hospital in Dublin, OH has been cancelled due to the weather. The performance has been rescheduled for April 17th 2010 at 6pm and 8pm $20 tickets. Please come out and support this wonderful show of area dance artists including Vitoria and Dublin Dance Center!

2 High fiber tortillas with hummus any flavor---270 cal

Cashews with salt and peppa---170 cal per serving

Pistachios in the shell baby toasted and lightly salted!

Elle's Homemade granola bars* ---100 cal per bar
made with sweetened condensed milk
Recipe:
3 cups of old fashioned oats
3cups of "whatever" (I use mini chocolate chips, pumpkin and sesame seeds, raisins or cranberries)
stir in 1 can of sweetened condensed milk (Fat free works fine)
You can add 2 tsps of vanilla and a couple tblsps of Davinci flavored syrup or honey it gives it a better flavor (I use sugar free raspberry right now)

Make sure the oats and other ingredients are well covered with the milk mixture and pat into a large WELL OILED jelly roll pan (15x10) works well or two batches in a 9x13. Bake in a preheated oven for 350 degrees and bake for 15-23 minutes till nicely golden browned (more if you want them crunchy). Cut into squares after 10 mins. You can freeze some for later too in freezer bags!

3 small Trader Joe's Dark Chocolate Squares---70 cal

Elle's flourless chocolate cake

Flourless Chocolate Cake
1 can chickpeas (19 oz), drained
1/3 cup vegetable oil
4 eggs
1 cup sugar
2/3 cup cocoa
2 tsp. baking powder
1 tsp. baking soda

In food processor or blender, blend chickpeas and oil. Add eggs, one at a time. Mix in sugar, cocoa, baking powder and baking soda.
Microwave: Bake in a microwave-safe ring pan for 11 minutes in the
microwave at 70% and then another 1-2 minutes at full power or until the cake comes away slightly from the sides.

Conventional oven: Bake in a 9" round cake pan in 350 degree oven about 50 minutes.
